Ingredients
| 1 whole head of garlic | 1 onion chopped up |
| 1 carrot chopped up | 1 lb chicken cut up into cubes |
| 2 cups chicken stock or bone broth | 1/2 cup of orzo (or other small pasta) |
| 1 tsp basil or thyme | salt and/or pepper to taste |
Instructions
- Separate cloves of garlic, shell, and crush or chop up
- In soup pot, put 2 tbsp of olive oil. Add onions and carrots. Cook for a bit until onions are translucent. Add garlic and cook another minute or so.
- Add chicken and cook until white and no pink is left.
- Add chicken stock/broth and cook for another minute or so while stirring.
- Add orzo and bring to a boil.
- Turn down to low. Add basil/thyme and salt/pepper to taste. Cook for about 20-25 mintues until orzo is done.
